I was wanting to go down a little bit in tire size to 275/35/21 and 295/35/21 with a 17mm spacer on the front and 20mm spacer on the rear.

Performance time would still be around ~3.5 seconds. Many times the stock wheels on the PMY have yielded ~3.6 seconds. The PMY is not a 3.3 or 3.2 second vehicle. I have a similar set up as OP with different style wheels, I've noticed a 5-10% drop in range on trips.
